Tea in China is a major part of the culture. There’s an interesting practice that is done at the beginning of the meal. You never drink the first cup of tea. You fill up your teacup, and then rinse your chopsticks in it. You wash them and then pour the contents out into the red bowl. Then you take the teapot and fill up everyone’s cups. When you place the teapot down on the table, you have to make sure that the spout is facing AWAY from EVERYONE (if possible). To say thank you for the tea, single people tap one finger (pointer) on the table, while people in relationships tap two fingers. (pointer and middle)
